What to use instead

156 substitutions across 83 ingredients, each saying what actually changes in the glass — not just what is roughly similar.

Most substitution advice stops at “you can use X instead”, which is the least useful half of the answer. What matters is what moves: whether the drink gets sweeter, sharper, weaker or simply becomes a different drink with its own name, and what to change to compensate.

Every swap below was written against a specific recipe, and that recipe is named — a substitution that works in a Daiquiri does not automatically work in a Martini, and pretending otherwise is how bad advice spreads.

Sometimes the honest answer is no

Where nothing works: Dry vermouth is doing the work here and nothing replaces it cleanly — it is wine, so it brings acidity and a herbal lift that no spirit or liqueur reproduces. Using less of it gives you a drier Martini; leaving it out gives you cold gin. Replacing part of it with olive brine makes a Dirty Martini, which is a different drink rather than a repair.
