Dry Vermouth
Dry vermouth is a fortified, aromatized white wine with a lighter, more herbaceous and less sweet profile than its red counterpart. It is a defining ingredient in classic stirred gin and vodka cocktails. Like all vermouth, it is wine-based and best kept fresh.

How it's made
White wine, fortified and infused with botanicals, then finished dry rather than sweetened. It is wine, and the consequence is the thing most people get wrong: an opened bottle oxidises within weeks and belongs in the fridge, not on a shelf. A Martini made with vermouth that has been open at room temperature for six months is the most common reason people conclude they dislike Martinis.
Origin
An aromatised wine style with roots in 18th- and 19th-century France.
What it pairs with
Gin above all, then sherry-adjacent and savoury flavours: olive, caper, citrus peel. Its acidity and salinity make it far more food-friendly than its reputation suggests.
