How to adjust any mocktail
Organised by what a component does rather than by its name, because a substitution list stops helping the moment you have something that isn't on it.
Alcohol-free drinks have less room to absorb a change than cocktails do. There are fewer ingredients, and alcohol itself was contributing body, aroma and a certain grip that nothing else in the glass is supplying. So before swapping anything, work out which of those jobs the component was doing — most do two.
Every entry below says what changes as well as what to use, because every swap costs something. Where a change forces a second adjustment, that is stated too.
It's too sweet
What the component is doing. Sugar is doing more than tasting sweet. It carries body, softens acidity and rounds off bitterness — which is why an alcohol-free drink usually contains more of it than its alcoholic counterpart, and why removing it thins the drink as well as drying it.
- What to use instead
- Acid first, not water. A few millilitres more citrus, or a splash of a shrub, cuts perceived sweetness without shortening the drink. If it needs to stay this long, replace part of the syrup with unsweetened juice or cold tea rather than soda.
- What stays the same
- Length, colour and carbonation all survive, and so does most of the body if you use acid rather than dilution.
- What changes
- The drink reads sharper and slightly lighter. Aromatics come forward, because sugar was muting them.
- Does it force another change?
- Often yes. Cutting sweetness in a drink that was already sharp leaves it sour rather than balanced, so taste before adding acid — you may need less than you expect, or none.
- What not to do
- Topping up with more soda. It dilutes the sweetness and everything else with it, and you end up with a longer drink that tastes of less rather than a balanced one.
- Doing it at home
- Adjust in the glass before remaking. A squeeze of lemon into a finished drink is faster and more reversible than rebuilding, and it tells you whether acid was the answer.

It's too sour
What the component is doing. Citrus supplies acidity, aroma from the oil in its skin, and a little bitterness from the pith. It is also the most variable ingredient in the drink — limes differ by weeks of ripeness, and a sharp one can be half again as acidic as a mild one at the same measure.
- What to use instead
- Sweetener, added a few millilitres at a time. You are correcting a ratio rather than a concentration, so adding water will not fix it. A richer syrup — honey, demerara — corrects sourness and adds body at once.
- What stays the same
- The aroma and the colour are unaffected; you are moving one axis only.
- What changes
- The drink gains weight as well as sweetness. Sugar carries body, so a corrected drink feels rounder, not just sweeter.
- Does it force another change?
- Rarely. Sweetening a sour drink is the one adjustment that usually needs no second correction.
- What not to do
- Swapping fresh citrus for bottled to reduce sharpness. Bottled juice is less sharp because it has lost its aromatics, so you lose the smell of the drink to fix its taste.
- Doing it at home
- Add sweetener in 5ml steps and taste between each. Overshooting takes you to the too-sweet entry above, which is a harder fix.

It's too bitter
What the component is doing. Bitterness is what stands in for alcohol's grip in an alcohol-free drink — it stops the glass tasting like juice. It also builds across a drink rather than announcing itself, so the last mouthful is more bitter than the first even though nothing changed.
- What to use instead
- Length or sweetness, not acid. More soda or tonic spreads the bitterness out; a little syrup covers it. Strong tea, brewed shorter, gives a gentler version of the same tannic grip.
- What stays the same
- The structure holds — the drink still has something to push against, which is what the bitter component was for.
- What changes
- It gets longer or sweeter. If you were relying on it as a short aperitif, lengthening changes what the drink is for.
- Does it force another change?
- Sweetening to cover bitterness can leave the drink flabby. If it tastes dull afterwards, a small amount of acid restores the edge without bringing the bitterness back.
- What not to do
- Adding more citrus. Acid sharpens bitterness rather than covering it — the two stack, and the drink gets harder to drink rather than easier.
- Doing it at home
- Lengthen first, because it is reversible in the sense that you can always make the next one shorter. Cutting the bitter component at the build is the permanent fix.

It tastes thin or watery
What the component is doing. Body is the thing alcohol-free drinks lose most obviously, because alcohol itself contributes viscosity and weight. Without it, body has to come from sugar, from pulp, from protein or fat, or from the texture a technique creates.
- What to use instead
- In rough order of how much they add and how little else they change: a richer syrup, unstrained juice with its pulp, a spoon of shrub, coconut cream or a dairy or plant milk. Shaking hard also adds a genuine, if temporary, lift that a built drink never gets.
- What stays the same
- Flavour and colour survive a syrup or pulp change almost entirely.
- What changes
- The drink coats the mouth more and reads as slower to drink. Fat or protein additions also mute aroma slightly, trading lift for weight.
- Does it force another change?
- Almost always. Every body-building option except technique adds sweetness or fat, so expect to re-balance with acid afterwards.
- What not to do
- Reducing the soda to concentrate the drink. That makes it stronger-tasting and shorter, not thicker, and usually makes it too sweet at the same time.
- Doing it at home
- Try the technique change first, because it costs nothing: shake a drink you were building, and see whether the texture was the whole problem before adding an ingredient.

It's too rich or heavy
What the component is doing. Cream, coconut and egg supply the weight and the long finish that make a drink feel substantial. They also carry sweetness and blunt aroma, which is why a rich drink often smells of less than it tastes of.
- What to use instead
- A lighter body source: unstrained citrus juice, a shrub, or simply more ice and a longer serve. Oat and almond drinks are noticeably lighter than dairy and behave similarly in the glass.
- What stays the same
- The drink keeps its shape and its sweetness; you are changing weight rather than flavour.
- What changes
- It becomes faster to drink and smells more strongly, because there is less fat holding the aromatics down.
- Does it force another change?
- Lightening usually exposes sweetness that the fat was hiding, so expect to cut the syrup as well.
- What not to do
- Diluting a rich drink with water or soda. Fat and water separate rather than combining, and the result looks and feels broken rather than lighter.
- Doing it at home
- Halve the rich component before removing it. Most rich mocktails are still recognisably themselves at half, and unrecognisable at none.

It tastes flat or one-dimensional
What the component is doing. Complexity in an alcoholic drink often comes free, from the spirit's own congeners. An alcohol-free drink has to build it deliberately, from layers that occupy different parts of the palate: bitterness, tannin, spice, acidity and aroma.
- What to use instead
- Add a layer rather than more of what is already there. Non-alcoholic bitters, a strongly brewed tea for tannin, a shrub for acidity with length, or a whole spice steeped briefly. Each adds something the drink does not already have.
- What stays the same
- The drink's identity holds, because you are adding rather than substituting.
- What changes
- It gets longer on the finish and less immediately sweet, which is usually what 'one-dimensional' actually meant.
- Does it force another change?
- Adding tannin or bitterness may need a small sweetness increase to stop the drink reading as austere.
- What not to do
- Adding a second fruit juice. It broadens the drink without deepening it, and two juices usually read as one muddier juice.
- Doing it at home
- Change one layer at a time and taste. Adding three things at once tells you the drink is better without telling you why.
It's too fizzy, or goes flat too fast
What the component is doing. Carbonation is not only texture. It carries a real acidity of its own, lifts aroma out of the glass and makes a drink taste drier than the same liquid flat — which is why a mocktail that goes flat also tastes suddenly sweeter.
- What to use instead
- For less fizz: part-substitute the soda with cold water, chilled tea or unsweetened coconut water, keeping the volume. For fizz that lasts: colder mixer, poured last and down the inside of the glass, and stirred once at most.
- What stays the same
- Length and dilution stay the same if you keep the total volume constant.
- What changes
- Less carbonation makes the drink taste sweeter and rounder, and the aroma drops noticeably.
- Does it force another change?
- Yes — removing fizz usually means removing a little sweetness too, or the drink turns cloying.
- What not to do
- Stirring the bubbles out to reduce fizz. It removes the carbonation and the aroma together, and leaves the drink tasting stale rather than gently sparkling.
- Doing it at home
- Build with less soda rather than letting a full-strength drink go flat — a deliberately shorter fizz tastes better than a collapsed one.

It doesn't smell of anything
What the component is doing. Aroma is the single largest thing lost when alcohol is removed, because alcohol is what carries volatile compounds out of the glass. Most of what people call flavour is smell, so a mocktail with no aroma tastes flat however well balanced it is.
- What to use instead
- Aromatics that sit above the liquid rather than in it: an expressed citrus peel, a bruised herb sprig, a whole spice, a few drops of non-alcoholic bitters across the surface. All of them work on the approach to the glass rather than in the mix.
- What stays the same
- Everything. This is the one adjustment that adds without taking anything away.
- What changes
- The drink reads as more intense without a single measure changing, because aroma arrives before flavour does.
- Does it force another change?
- None, with one exception: an over-expressed peel drops enough oil into the drink to add a faint bitterness to the first mouthful.
- What not to do
- Adding more of the flavouring ingredient. More juice makes the drink taste stronger, not smell stronger — those are different problems with different fixes.
- Doing it at home
- Express the peel with the skin facing the drink, then drop it in. Put herbs in the glass rather than on the side, where the reader will never smell them.
There's too much spice or heat
What the component is doing. Ginger, chilli and pepper supply a physical bite that stands in for alcohol's burn. That is genuinely useful in an alcohol-free drink and genuinely unpleasant if you did not want it.
- What to use instead
- Something with grip but no heat: strong tea for tannin, a bitter soda, or a tart shrub. All three give the drink something to push against without the burn.
- What stays the same
- Length, fizz and colour hold, and the drink keeps a structure rather than collapsing into juice.
- What changes
- The drink stops being warming. If heat was the point — a mule, a spiced winter drink — this makes it a different drink rather than a milder one.
- Does it force another change?
- Removing heat often exposes sweetness, because the burn was masking it.
- What not to do
- Cutting the ginger beer with more ginger ale. Ginger ale is sweeter as well as milder, so you reduce the heat and raise the sugar at the same time.
- Doing it at home
- Cut the spicy component with its unspiced equivalent rather than removing it, so the volume and the sweetness stay where they were.
I don't like the herb or the fruit in it
What the component is doing. A herb is usually supplying aroma rather than flavour, and a fruit is usually supplying acidity and sweetness together. Identifying which of the two you are removing decides what has to replace it.
- What to use instead
- For a herb: another aromatic in the same register — basil for mint, rosemary for thyme, a citrus peel for any of them. For a fruit: match the acid first and the sweetness second, which usually means citrus plus a little syrup rather than another fruit.
- What stays the same
- The drink's structure survives, because you are replacing a role rather than deleting it.
- What changes
- The character changes honestly and there is no point pretending otherwise — a basil version of a mint drink is a good drink, not the same drink.
- Does it force another change?
- Swapping a fruit almost always shifts sweetness, so expect to re-balance. Swapping a herb rarely does.
- What not to do
- Dropping the component and adding nothing. A mocktail has fewer ingredients than a cocktail and less room to absorb a deletion, so an omission is felt immediately.
- Doing it at home
- Smell the two herbs side by side before committing. Aromatics that read as similar in the hand usually behave similarly in the glass.
I don't have one of the ingredients
What the component is doing. Work out which job the missing item was doing — acid, sweetness, body, aroma, bitterness, length or fizz — before looking for a replacement. Most ingredients do two of those, and a substitute that covers only one leaves a hole.
- What to use instead
- Whatever covers the same jobs. Every recipe on this site lists its own substitutions with the flavour impact recorded, and says explicitly where no good substitute exists rather than inventing one.
- What stays the same
- Depends entirely on how many jobs the original was doing. A single-job ingredient swaps cleanly; a shrub or a cordial rarely does.
- What changes
- Usually the aroma, because that is the job most substitutes fail to cover.
- Does it force another change?
- Yes when the original carried sweetness alongside its main job — a sweetened substitute needs the syrup cut to compensate.
- What not to do
- Alcohol-free spirits as a like-for-like replacement for a spirit in every case. They vary enormously, and several supply almost no body, so a drink built to lean on one can arrive noticeably thinner.
- Doing it at home
- Check the recipe's own substitution list first — it is specific to that drink, which a general rule cannot be.
I'm avoiding dairy or egg
What the component is doing. Both are there for texture: egg white for foam and a silky mouthfeel, dairy for weight and a long finish. Neither contributes much flavour, which is what makes them replaceable.
- What to use instead
- For foam, aquafaba — the liquid from a tin of chickpeas — behaves closely enough that it is the standard substitute, and needs a longer, harder shake. For weight, oat drink is the closest to dairy in body; coconut milk is heavier and brings its own flavour.
- What stays the same
- Foam height and mouthfeel come out close with aquafaba, and the drink looks much the same.
- What changes
- Aquafaba foam is slightly less stable and drops sooner. Plant milks change colour a little and can split against strong acid where dairy would not.
- Does it force another change?
- Plant milks are often sweetened, so check and cut the syrup accordingly.
- What not to do
- Leaving the foaming agent out and shaking harder. Nothing else in the glass will hold air, and you get a flat drink with a slightly bruised flavour from over-shaking.
- Doing it at home
- Add plant milk to acid slowly rather than the other way round, and it is far less likely to split. This describes what happens in the glass — judging whether an ingredient suits your own needs is your call, not this page's.
