Tequila Blanco

Blanco tequila is distilled from the blue agave plant and bottled unaged or rested only briefly, preserving the spirit's peppery, vegetal agave character. It is the most assertive and traditional style of tequila. Its bright, earthy heat makes it the preferred choice for cocktails that want agave flavour to come through clearly.

Keeps more or less indefinitely: Alcohol is preserving it. An open bottle keeps for a very long time, though aromatics do fade slowly.

Buying: look for '100% agave' on the label; mixto tequilas cut with other sugars taste noticeably harsher

How it's made

Tequila is made from the cooked heart of the blue agave, and how the agave is cooked matters enormously — traditional brick-oven roasting produces a rounder, sweeter spirit than the industrial autoclave method. 'Mixto' tequilas may legally contain up to 49% other sugars; a label reading 100% agave is the single most useful thing to check.

Made from blue agave grown around Tequila, Jalisco, Mexico, under Denominación de Origen rules.

What it pairs with

Lime, grapefruit, orange and salt are the natural partners; agave's earthiness also takes chilli and coriander well. It does not sit comfortably with cream or with delicate floral flavours.

In alcohol-free drinks

  • Agave-forward alcohol-free spirits get closest, though none reproduces tequila's vegetal edge
  • A salt rim does more work in an alcohol-free Margarita than in the original — it supplies the structure the spirit used to
