How it's made
Water carbonated under pressure, sometimes with a small amount of mineral salts. Carbonation is not a flavour but it is not neutral either: dissolved carbon dioxide forms carbonic acid, which registers as a faint sourness and a physical prickle.
Origin
Artificially carbonated water dates to Joseph Priestley's experiments in the 1760s and became commercially widespread in the nineteenth century — the technology that made the entire highball category possible.
What it pairs with
Lengthens anything without changing its flavour, which makes it the right choice when a drink is good but too intense. Tonic is the better choice when the drink needs bitterness rather than dilution.
