Method

  1. Add gin, both citrus juices, simple syrup, cream, egg white and orange flower water to a shaker without ice.
  2. Dry shake hard for a full 2–3 minutes to build a thick, stable foam — this is the step that makes the drink.
  3. Add ice and shake again for another 1–2 minutes until the shaker is frost-cold.
  4. Strain into a chilled tall glass without ice.
  5. Top gently with soda water, letting the foam rise above the rim, and let it settle for a minute before serving.

Make it better

  • This drink genuinely needs the long shake — traditional accounts describe bartenders shaking it for up to 12 minutes; a few minutes at home gets you most of the way there.
  • Use pasteurised eggs for peace of mind, and always use fresh, properly refrigerated eggs.
  • Add the orange flower water sparingly — a little goes a long way and too much turns soapy rather than floral.
  • Let the poured drink sit for a minute before serving; the foam needs a moment to settle and rise properly.
  • Add the carbonated mixer last, after shaking or stirring the rest, and pour gently to keep as much fizz as possible.
  • Adjust sweetness gradually and taste as you go — it's easy to add more syrup, impossible to take it out.

Shake longer on the dry shake — this drink needs significantly more time than a standard egg-white sour.

    Likely cause
    Simple syrup is carrying the sugar here, and it is the easiest thing in the drink to over-pour — syrup clings to a jigger and a "splash" is rarely the same twice.

    The drink will read sharper as well as less sweet, because the acid stops being balanced. That is usually the intention, but it is a bigger change than it sounds.

    Fresh lemon juice varies more than any other ingredient in the drink. Limes differ by weeks of ripeness, and a sharp one can be half again as acidic as a mild one at the same measure.

Technique

Ice is thrown against the liquid and against itself, chipping fragments off and driving air through the mix. Chilling, dilution and aeration all happen at once and cannot be separated.

A lighter, briefly frothy body and a cloudy appearance that settles as it stands. The aeration blunts alcoholic heat, which is why a shaken drink tastes softer than a stirred one of the same strength.

What it ruins: Clarity, and any carbonation. A shaken spirits-only drink arrives cloudy with ice shards floating in it, and shaking anything fizzy is the one rule with no exceptions.
