A classic cocktail is not simply an old one. It is a drink that survived the twentieth century's two great interruptions — Prohibition and the mid-century collapse of bar technique — because enough people kept making it, and because the recipe was good enough to be worth recovering when the craft revival went looking.

These are the drinks with the least room to hide. Most are three or four ingredients, most are stirred or shaken with no mixer to fall back on, and all of them expose a mediocre spirit or a careless ratio immediately.
