Drinks that ask something of you — advanced technique, unusual builds, or enough moving parts that order matters.
These are the drinks where method is not a formality. A Ramos Gin Fizz is famous for the length of its shake; a layered drink fails visibly if poured in the wrong order; a six-ingredient tiki build falls apart if the ratios drift.
None of them are difficult in the sense of requiring equipment you don't have. They are difficult in the sense of requiring attention, which is a much better reason to attempt something.
