Method

  1. Fill a highball glass with ice.
  2. Add the gin and lime juice.
  3. Top with cold soda water.
  4. Stir briefly, just once or twice, to combine.
  5. Drop in a squeezed lime wedge as garnish.

Make it better

  • Squeeze the lime fresh into the glass rather than pre-juicing — a bit of pulp and oil from the peel is part of the drink's character.
  • Use plenty of ice and fill the glass fully — this keeps the drink cold without over-diluting it.
  • Taste before adding more lime; the drink should be dry and sharp, not sour enough to pucker.
  • Add the carbonated mixer last, after shaking or stirring the rest, and pour gently to keep as much fizz as possible.
