Lemon Juice

How it's made

Like lime, this is a freshness question rather than a production one, though lemon holds up marginally better — a few hours rather than minutes. Lemons vary in acidity by season considerably more than people expect, which is one reason published sour ratios are starting points.

Origin

Native to South and Southeast Asia and spread through the Mediterranean by Arab agricultural trade; lemons were established in European cooking and medicine centuries before the first printed cocktail.

What it pairs with

Rounder and less aromatic than lime, which makes it the better match for whisky, brandy and elderflower. Lime suits rum, tequila and gin; the two are not interchangeable despite constantly being treated as such.
