Tonic Water

Tonic water is a carbonated soft drink flavoured with quinine, giving it a distinctive bitter edge beneath its sweetness that sets it apart from plain soda water. That bitterness makes it a natural partner for botanical spirits. It is best known as the classic partner to gin.

Months once opened: Keeps for months once opened, but it does change. Nothing urgent; worth finishing within a season.

Buying: Small bottles over large ones — the last third of a two-litre bottle is flat, and carbonation is half of what you are buying. Slimline versions cut sugar but taste noticeably thinner under a botanical spirit.

Storage: best used soon after opening, as carbonation fades quickly

How it's made

Carbonated water with quinine — originally an anti-malarial preparation, which is why the bitterness is there at all — plus sugar or sweetener to make it drinkable. Quinine is what makes tonic fluoresce blue under ultraviolet light, and the quantity in a modern tonic is a flavouring dose rather than a medicinal one.

Origin

Developed by British colonists in India, originally to make bitter quinine more palatable.

What it pairs with

Gin and botanical alcohol-free spirits above all, then citrus, cucumber, elderflower and espresso. Its sweetness means a tonic-based drink rarely needs any added sugar.
