Gold Rum

Gold rum rests in oak barrels for a period, picking up an amber hue and a rounder, caramel-tinged character than white rum. How it's made

Gold rum sits between white and dark, and the colour is not a reliable guide to anything: it may come from barrel ageing, from added caramel, or from both, and labels rarely distinguish. Ageing in Caribbean heat is fast, so a three-year-old rum can carry more oak than a much older spirit from a cooler climate.

Caribbean in origin, briefly oak-aged to gain colour and depth beyond white rum.

What it pairs with

Lime, pineapple, orgeat, falernum and warm spice. It is the most flexible rum for tiki builds precisely because it has some barrel character without dark rum's molasses weight.

In alcohol-free drinks

  • No close substitute — the barrel character has no alcohol-free equivalent. A strong black tea plus a little vanilla syrup approximates the tannin and sweetness, not the warmth.
