Origin

Vodka's origins in Eastern Europe — Poland and Russia both claim primacy — are genuinely contested and the dispute is as much national as historical. What is not contested is that the modern, highly-rectified international style is a twentieth-century product.

How it's made

Distilled to a very high strength and filtered specifically to strip congeners and flavour rather than to build them. The base material — grain, potato, grape — survives as texture and a faint sweetness rather than as recognisable flavour, which is precisely the category's design goal.

Flavour

Deliberately minimal. Differences between good bottles are questions of texture, sweetness and burn rather than flavour, and blind tastings embarrass people more reliably here than in any other category.

What it does in a drink
