Carbonation is the most underrated ingredient in alcohol-free drink-making. Bubbles carry aroma to the nose, add a physical prickle that reads as 'bite', and lengthen a drink without diluting its flavour the way water would. A flat mocktail and a sparkling one made from identical ingredients are not the same drink.

The rule for all of these: top last, pour against the glass, and stir once at most. Never shake anything carbonated, and never build a sparkling drink in a warm glass — both destroy the one ingredient you chose the recipe for.
