Alcohol-free drinks built on the sour template — citrus and sweetener, shaken hard and served up or over ice.
The sour — something sharp, something sweet, something with body — is the single most useful template in drink-making, and it works without alcohol as long as you shake it properly. The shake is not a formality: it aerates, chills and dilutes in one step, and an under-shaken sour tastes thin no matter how good the ratio is.
Twelve to fifteen seconds, hard, until the outside of the shaker frosts. If you don't own a shaker, a jam jar with a tight lid does the same job — hold the lid down and shake it over the sink the first time.
