Summer is when alcohol-free drinking is easiest to do well: the drinks people want in hot weather — long, cold, sharp, low in alcohol anyway — are exactly the ones that translate best. A Lime Rickey or a Virgin Sea Breeze is not a compromise in July.

The practical problem is ice. In real heat a drink dilutes fast, so build these with the glass full rather than half-full, and make them slightly stronger-tasting than feels right.
