Winter alcohol-free drinking is dominated by two problems: everything on offer is either sweet or cold, and neither is what anyone wants in December. Hot spiced drinks solve both, and they are the category where removing the alcohol costs least — spice and citrus were always carrying most of the flavour.
The technique that matters is steeping. Whole spices, low heat, and no boiling; the difference between a good mulled drink and a bad one is almost entirely patience.
