Black Tea, Strong-Brewed
Strong black tea, brewed and cooled, is the most practical source of tannin in an alcohol-free drink: the drying grip that wine and aged spirits give and juice never does. Brewed strong and short it is a modifier, used in small measures; a smoked tea such as lapsang souchong also brings the smoke a whisky would. Brewed long or too hot, it turns harshly bitter.
Common uses
- tannin and body in short alcohol-free drinks
- a smoky base for alcohol-free takes on whisky drinks (lapsang souchong)
Buying & storage
A few days: Brew it on the day. Brewed tea goes flat within a day or so, and over-steeped tea cannot be rescued.
Storage: brew it for the drink and refrigerate; brewed tea loses its aroma and turns flat within a day or so

What goes wrong with it
- What it does
- Tannin — the drying grip juice cannot give — and body, at no sugar.
- Freshness risk: high
- Brewed tea goes flat and dull within a day or so, and the aroma goes first. How to tell: A dull, stewed smell and a darker colour than when it was brewed.
- The handling mistake
- Brewing it too long or with water straight off the boil and left to stew. Over-extracted tea is harshly bitter and astringent rather than pleasantly drying, and cooling does not soften it. Once done, it cannot be undone — start again.
Swaps that don't work
- Iced Tea: Ready-made iced tea is brewed weak and often sweetened. It lengthens a drink; it does not give it grip.
