Refreshing is the easiest thing for an alcohol-free drink to be and the easiest to get wrong. What makes a drink refreshing is not fruit — it is acidity, dilution and temperature working together, which is why a properly-made lime and soda refreshes and a glass of orange juice does not.

Every drink here is long, served over plenty of ice, and carries enough acid to finish clean rather than coating the palate. If you are making one drink for someone who says they don't like sweet things, start on this list.
