Hawthorne vs Fine Strainer
Why many shaken drinks are strained twice, and when once is enough.
Which should you use?
They are partners, not rivals. The Hawthorne holds back the ice; the fine strainer catches what gets past it — small shards, citrus pulp, herb fragments. Use the Hawthorne alone for drinks poured over fresh ice, where the ice in the glass hides a few chips anyway. Use both, double-straining, for anything served up in a stemmed glass, and for any drink that had mint or fruit in the shaker.
| Dimension | Hawthorne strainer | Fine strainer |
|---|---|---|
| Catches | Ice cubes and larger chips | Shards, pulp, seeds, herb flecks |
| Speed | Fast | Slower; clogs with pulp |
| Alone, on a drink served up | Ice flecks on the surface | Cannot hold back the ice on its own |
| Effect on texture | None beyond removing ice | Smoother first sip, clean surface |
Using one in place of the other
A fine strainer cannot replace a Hawthorne; it overflows with ice. A Hawthorne without a fine strainer gives the same flavour with a slightly gritty, flecked texture.
