Whole Milk

Whole milk is rarely an ingredient you taste in a cocktail. Its main job at the bar is clarification: poured into an acidic punch, its casein proteins curdle into a net that catches the haze, much of the bitterness and some of the colour, and is then strained out. What passes through is clear and silky, and still carries some milk sugar and whey protein, so a clarified drink is not dairy-free.

Commonly associated with: Milk

  • Milk. A drink clarified with milk still contains some milk protein after the curds are strained out.

Products vary; check the label.

Common uses

  • clarifying punches and sours (milk punch)
  • warm, milky drinks

Buying & storage

A few days: Good for a few days refrigerated, then noticeably duller. Worth planning a second drink around rather than throwing away.

Buying: Use fresh, pasteurised whole milk. Skimmed milk clarifies but gives a thinner texture; plant milks do not curdle the same way and will not clarify a drink.

Storage: refrigerate and use by the date on the carton; once opened, within a few days

Swaps that don't work

  • Cream: Far more fat and proportionally less of the casein that does the clarifying. It makes a heavy, greasy curd and a cloudier result.

Used in fewer than 3 recipes, so no technique split or partner list is drawn — a pattern needs more drinks than this.
